I had a (pre-made from a local grocery store) Beets & Arugula Salad. It was made with two types of beets: Red and Yellow; arugula (Rocket to you British-types); whole pistachios; and Feta cheese. It was served with a nice honey-mustard dressing.
I have been a beets-fan since I was a kid. It really helped that I liked a lot of oddball vegetables when I became a vegetarian as a teenager.
This was a great salad for me. It did contain about 75% arugula, but I like that, too.
I just wish the pistachios were not still in the shells. It really made for a very crunchy salad like that...
